Eggplant Salad. Turkish Recipe


I have a small Turkish cookbook which wasn't touched for years, but today I was looking for something new so I have decided to look for a salad recipe. The eggplant salad (Patlican Salatasi) attracted my attention and I went to the supermarket to buy the ingredients.

After my short supermarket trip I went in the kitchen and prepared this delicious eggplant salad with nuts and garlic.

It takes a little longer to prepare this salad because you must cook the eggplants. Also they need to rest in the fridge for 30 minutes.

If you want to save time you can buy already prepared eggplants. You should find them in any well supplied supermarket. Look for them in the frozen vegetables area.

  1. The eggplant salad sounds and looks delicious… very much like baba ganoush with the addition of ground nuts. I’m going to try this recipe. i do hate peeling eggplants after roasting though :( .

    You can get them ready to eat. You should find frozen egg plants which are already prepared.
