
Ingredients (serves 4)
- 1/4 cup fresh lemon juice
- 1/4 cup Dijon mustard
- 5 teaspoons honey
- 2/3 cup extra-virgin olive oil
- 1 large bunch celery with leaves
- 2 large Granny Smith apples, peeled, quartered, cored; each quarter cut into 2 wedges, then thinly sliced crosswise into triangle shapes
- 3/4 cup walnuts, toasted, chopped
How to prepare the apple and celery salad with walnuts and mustard vinaigrette
1. In a small bowl combine lemon juice, Dijon mustard and honey gradually adding oil. Add a pinch of salt and a pinch of pepper.
2. Chop the celery leaves (you need 1 cup of them). Cut the stalks on diagonal, thinly.
3. Put the celery in a bowl with cold water.
4. Drain the celery pieces using paper towels.
5. In a large bowl mix celery, celery leaves, apples, and walnuts.
6. Pour the vinaigrette over the salad and toss.
How to serve
Season to taste with salt and pepper and serve immediately.
